What is "suffrite?
I've seen in the Italian pizzeria menu, but can not find a definition (or recipe) for it. Also mentioned in the song "agita" appears in the 1984 Woody Allen movie "Broadway Danny Rose."
Soffritto (literally "sub-fried" in Italian) is the basis of common Italian dishes. It consists of aromatic ingredients sauteed with cooking oil. The basic soffritto prepared with extra virgin olive oil, chopped onions (or scallions) and sometimes chopped garlic cloves. According to the recipe or regional preference, oil Olive can be replaced with butter or both can be used. One may prefer not to add garlic. The next step is to add additional ingredients to soffritto. There is great variety of options, such as vegetables (carrots, celery, artichokes, etc), mushrooms, ham, olives, tuna, and so on, but these are not elected arbitrarily, since the ingredients are generally considered a meal giving his character.
